Jerk Sauce in a Bottle: Building Restaurant Equity through Retailing

Founded in 2015 and headquartered in Charlotte, North Carolina, Marlie Q’s Caribbean Queen Food Truck focuses on providing their famous jerk chicken, oxtails and stir cabbage and other popular dishes on their food truck to clients. Owner Marlon Nesbeth is interested in packaging her jerk sauce and distributing it to retail channels such as specialty stores and butcher shops and meat markets to boost revenue growth and build brand awareness. NCGrowth analyst and UNC Kenan-Flagler MBA candidate, Yiwen Lin, worked with Malon to develop a comprehensive feasibility study for the new business including a marketing and sales plan, extensive research and analysis, comprehensive competitor analysis and direct competitor profile, consumer survey and financial plan. This project benefited from external reviewers including a senior executive from a regional grocery chain and Huan Lian, a data analyst at the Kenan Institute of Private Enterprise.
